Chai Banana Porridge June 24 2015
INGREDIENTS (serves 2)
1/2 cup blanched macadamia nuts
1/2 cup blanched almonds
1 banana
1 cup coconut milk
1/2 cup water
1/2 cut desiccated coconut
1 tbsp chia seeds
1/2 tsp ground cardamon
1/2 tsp ground ginger
1/2 tsp ground ginger
1/2 gsp cinnamon
Pinch of ground nutmeg
Pinch of Himalayan salt
1 tsp vanilla extract
1 tbsp raw honey to drizzle over
Fresh berries to serve
In a food processor, grind macadamia nuts and almonds into small crumbs. Add banana and process together until banana is pureed. Alternatively, you can use a fork to mash the banana and a mortar and pestle to break the nuts. Transfer to a small saucepan.
Add the rest of ingredients, except honey. Bring to simmer and cook for a couple of minutes. Serve in bowls drizzled with honey, fresh berries and some cinnamon.
To speed up the process, you can keep a larger batch of processed nuts mixed with spices in a jar in the pantry, ready to go. Blanched nuts refers to nuts with no skin on. You can easily use regular almonds.
